Singhare ke pakore is a traditional North Indian snack that is prepared specifically for upwas during festivals. Only certain flours are used during fasts and singhare ka atta is one of them. The singhare ke pakore is made with the water chestnut flour mixed with boiled potatoes and other vrat-specific spices and is deep fried.
The vrat wale pakore goes well with the phalahari chutney and is eaten when people fast for Navratri, Ekadashi and other festivals. The singhare ke pakore are crunchy on the outside and retain the softness inside.
The singhare ka atta is gluten free and hence requires the potato or arbi to bind the batter together and it also adds on to the taste. The singhare ke pakore are simple and quick to prepare at home. SINGHARE KE PAKORE VIDEO RECIPE

Boiled potatoes (peeled and cut into half) - 2
Rock salt to taste
Coriander leaves (chopped) - ½ cup
Green chillies (chopped) - 2 tsp
Singhare ka atta - 1 cup
Water - ¼th cup
Oil - for frying

1. Add boiled potatoes in a mixing bowl.
2. Add rock salt and coriander leaves.
3. Add chopped green chillies.
4. Mash well.
5. Add singhare ka atta and mix well.
6. Add little water in intervals and make it into a very thick batter.
7. Heat oil in a pan for frying.
8. Add a spoonful of batter in the oil one after the other as drops and fry on a high flame.
9. Flip them over and fry until all the sides turn golden brown.
10. Remove from the oil and serve hot.

- 2. You can leave the potatoes as chunks instead of mashing them completely.

STEP BY STEP - HOW TO MAKE SINGHARE KE PAKORE
1. Add boiled potatoes in a mixing bowl.

2. Add rock salt and coriander leaves.


3. Add chopped green chillies.

4. Mash well.

5. Add singhare ka atta and mix well.


6. Add little water in intervals and make it into a very thick batter.


7. Heat oil in a pan for frying.

8. Add a spoonful of batter in the oil one after the other as drops and fry on a high flame.


9. Flip them over and fry until all the sides turn golden brown.

10. Remove from the oil and serve hot.
