Vegetarian Russian salad is an Indian version of the traditional Russian salad. It is a healthy recipe and needs to be included in a staple vegetarian diet. Russian salad is prepared by combining fruits and vegetables in a thick creamy yoghurt dressing.
The Russian salad is slightly different from the other salads, as the vegetables used in this salad are parboiled and not raw. The vegetables give the crunch and along with the sweetness of the fruits, richness of the thick curd and the tanginess of the pineapple, make this salad absolutely feeling and delicious.

Thick curd - 3 tbsp
Pepper to taste
Powdered sugar - 3 tsp
Salt to taste
Apple (chopped) - ½ cup
Pomegranate seeds - ½ cup
Potato - 1
Water - 1 cup
Cabbage (shredded) - 2 tbsp
Cucumber (finely chopped) - 3 tbsp
Pineapple (finely cut) - ½ cup

1. Add water to a pressure cooker.
2. Add the potato and pressure cook it for up to 2 whistles.
3. Allow the pressure in the cooker to settle.
4. Open the lid and peel the skin of the boiled potato.
5. Cut it into cubes and keep it aside.
6. Add thick curd in a medium-sized bowl.
7. Crush pepper according to taste.
8. Add powdered sugar and salt.
9. Add apple and pomegranate seeds.
10. Add the boiled potato cubes and cabbage.
11. Add cucumber and pineapple.
12. Mix well.
13. Serve.
- 1. Make sure the curd is fresh and not sour.
- 2. You can also use pepper powder instead of crushing the peppercorn.
- 3. Make sure the cabbage is shredded finely, otherwise it will overpower the taste of the other fruits and vegetables.
- 4. You can add other fruits according to your preference.
- 5. You can add other vegetables like carrots, beans and capsicum after parboiling them.

STEP BY STEP - HOW TO MAKE RUSSIAN SALAD
1. Add water to a pressure cooker.
