Crunchy & Spicy Cucumber Gojju Recipe
Cucumbers are best for summers as they are juicy vegetables and are rich source of vitamins and carbohydrates. The crunchy vegetables are great for skin and eyes. Cucumbers can be chopped and added to tasty gojjus (Karnataka recipe) which is served with hot khara pongal in south India. Take a look at how to make the delicious cucumber gojju.
Cucumber Gojju Recipe – South Indian Recipe
Ingredients:
1. 1 cucumber (peeled, chopped)
2. 2-3 tsps of tamarind juice
3. 1 piece of Jaggery
4. Salt according to taste
5. 1 tsp chilli powder
6. 1 cup water
7. 1 tsp mustard seeds
8. Pinch of asafoetida
9. 1 tsp oil
Cucumber Gojju Preparation:
1. Fry mustard seeds and asafoetida in a teaspoon of oil.
2. Mix the rest of the ingredients in a bowl and add the fried mixture. Tasty Cucumber Gojju is ready.
