Tasty Coconut Rice Recipe
If you are worried about the leftover rice you had prepared last night, then don't worry. If you have a fresh grated coconut in hand, your problem is solves. As the rice prepared with coconut works wonder, be it the taste or even the preparation time. Coconut rice is one of the staple foods of South India and many people prepare this in order to save time as it is easy to prepare.
An amateur cook can try preparing coconut rice as it is a very easy and simple recipe. Ingredients like cashews, green chillies and curry leaves are basically used in the preparation of coconut rice. Apart from them, coconut is the main ingredient as the name of the recipe says it all. Though this is a vegetarian recipe, you can have it with chicken curry as it adds more taste to the dish. People who like to add spice to their taste buds can also add ginger to the rice which not only gives a flavour and taste but is also good for health.

Cooking time: 10 minutes

Ingredients
Rice- 1 cup (uncooked)
Grated coconut- 3/4 cup
Mustard seeds- 1tsp
Channa dal- 1tbsp
Urad dal- 2tsp
Red chillies- 2 (finely chopped)
Green chillies- 3 (finely chopped)
Curry leaves- 5
Ginger- 1tsp (finely chopped)
Oil- 1tbsp
Asafoetida/Hing- a pinch
Cashew nuts- 8-10
Salt- as per taste
Procedure
1. Boil rice. Spread it in a plate and keep it aside to cool.
2. Heat oil in a pan, add mustard seeds, wait till they splutter.
3. Once the mustard seeds start to splutter, add channa dal, urad dal, cashew nuts and roast till they becomes slightly brown.
3. Add red chillies, green chillies, ginger, asafoetida and curry leaves and saute for 10 seconds.
4. Add grated coconut and saute for a few minutes till it becomes slightly brown. Add salt and mix well.
6. Now, add cooked rice and mix all the ingredients.
Your tasty coconut rice is ready. You can have it with pickle, papads or any gravy of your choice.
