Banana Souffle
Ingredients:
3 Large Bananas (ripe)
1 Sour Lime Juice
65 gms Sugar
1tbsp Corn flour
e tsp Nutmeg
180 ml Milk
3 Eggs, Separated
30 gms Butter
1tsp Vanilla Essence
Method:
Grease a medium sized souffle dish and sprinkle with some sugar. Peel Bananas and blend along with Lemon juice. Let it become creamy, keep aside. In a pan add Sugar, Corn flour, Nutmeg and Lemon rind. Add milk and cook over a low flame stirring continuously, until it thickens.
Remove and keep aside. Beat the Egg Yolks well, add few table spoons of the milk sauce and mix well. Combine well and pour back into the remaining Milk sauce. Add remaining Butter, Vanilla Essence and pureed Bananas. Allow the mixture to cool. Whisk Egg whites until stiff. Fold into Banana mixture till it is evenly mixed.
Pour into prepared souffle dish. Bake in a hot oven at 375 degree C for 40 minutes or until well risen and the top turns brown in color. Serve immediately with freshly beaten cream.
