Broccoli And Scallop Soup Recipe

Ingredients:

  1. 150ml olive oil
  2. 2 onion (finely chopped)
  3. 2 cloves garlic (finely chopped)
  4. 2 potatoes (cut into small pieces)
  5. 1 bowl of fresh broccoli (trimmed into tiny florets)
  6. 1/2 cup fresh cream
  7. 1/2 cup parsley (finely chopped)
  8. 18 scallops (without roe)
  9. Salt to taste
  10. Pinch of black pepper

Preparing Broccoli Scallop Soup:
1. Heat 2 tbs oil in a thick bottom saucepan and saute onions and garlic. Add potatoes, 4 cups water and allow it to boil.
2. Also add broccoli to the boiling potatoes and cook until tender. The mixture is allowed to cool and coarsely ground.
3. Return the mixture to the pan, add pepper, salt with cream and cook on simmer.
4. Meanwhile combine parsley with oil in a blender. Blend until smooth.
5. On the other side cook Scallops for a few minutes until tender. Add the cooked scallops and season the soup with parsley oil. Tasty Broccoli scallop soup is ready.
