Mumbai Style Egg Bhurji Recipe (Video)
Egg bhurji is a recipe that is well known by every Indian cook. However, there are many versions of this recipe. Egg bhurji or scrambled eggs is an Indian recipe of street food. You can usually get this dish at dhabas and street stalls. You can also make delicious egg bhuri at home. This is a special Mumbai style egg bhurji recipe we will be sharing today.
The specialty of the egg bhuji recipe is that it is very simple and quick. And in the Mumbai style egg bhurji recipe, we usually add some extra pav bhaji masala that is not added elsewhere. The dish still remains a simple one that can be prepared within 5-8 minutes if you have all the ingredients ready. And with egg bhurji recipe video, your job will become easier. Ingredients
- Ginger (grated) 1 tsp
- Onion- 1 (chopped)
- Green bell pepper- 1 (chopped finely)
- Green chillies- 2 (chopped)
- Tomato- 1 (chopped)
- Eggs- 4
- Turmeric- 1 pinch
- Pav bhaji masala- 1 + 1 tsp
- Oil- 2 tbsp
- Salt- as per tatse
- Butter- 1tbsp
- Coriander leaves- 2 stalks (chopped)
Procedure
- Heat oil in a kadai or deep bottomed pan. Add grated ginger first. Then add the onions.
- Fry on medium flame for 2-3 minutes.
- Add the capsicum and green chillies; fry on a low flame for 2 minutes.
- Add tomatoes in the end; cook for a minute on medium flame.
- Meanwhile, break the eggs into a bowl; add salt, turmeric and pav bhaji masala. Beat the egg mixture thoroughly.
- Pour the beaten eggs into the deep bottomed pan. Mix the eggs with the vegetables and cook on medium flame for 3-4 minutes.
- When the egg bhurji is almost ready, sprinkle pav bhaji masala on it.
- Also add a dallop of butter for taste.
- You can garnish the egg bhurji with chopped coriander leaves.
Serve the egg bhurji with breads or the traditional Mumbai 'pav' breads.
