Chicken Kabiraji Cutlet: An Evening Snacks

It is rare to find a non vegetarian who does not love chicken cutlet. It is deep fried, crisp and often spicy, that is why it is hard not to like chicken cutlets. And if you love cutlets, then you must try the special Bengali recipe called Kabiraji cutlet. This is a special type of chicken cutlet that is fried with an abundance of eggs and breadcrumbs.

The USP of a Kabiraji cutlet is that it is very heavy. You can have it as a snack or also as a meal. Bengali recipe is essentially inspired from street food. The Kabiraji chicken cutlet was popular in the coffee houses and cabins of Kolkata. This kind of chicken cutlet was very popular among the Bengali intellectuals who spend hours discussing politics over cups of tea or coffee.

Kabiraji Cutlet

Today, it is very easy to make this fried snack at home.

Serves: 2
Preparation Time: 45 minutes
Cooking Time: 15 minutes

Ingredients

  • Chicken breasts (boneless)- 2 (250 grams)
  • Onion- 1
  • Ginger- 1 inch
  • Garlic- 6 pods
  • Green chillies- 2
  • Lemon juice- 1tbsp
  • Cumin powder- 1tsp
  • Eggs- 4 (beaten)
  • Breadcrumbs- 1 cup
  • Oil- 4tbsp
  • Salt- as per taste

Procedure

  1. Grind onion, garlic, ginger and green chillies into a thick paste.
  2. Marinate the chicken breasts with this paste. Sprinkle lemon juice on the chicken pieces.
  3. Also add salt and cumin powder. Now allow the chicken to get marinated for 30 to 45 minutes.
  4. After this time period, heat oil in a deep bottomed pan.
  5. Whisk the eggs with a bit of salt. Dip the marinated chicken breasts in the egg and roll them in bread crumbs.
  6. When the oil is steaming, place the chicken cutlets in the pan and lower the flame.
  7. Cook for 10 to 15 minutes until both sides become golden brown.

You can serve Chicken Kabiraji cutlets with onion rings and a mustard sauce (kasundi).
