Ghost masala is a spicy lamb curry that hails from the meat paradise of Hyderabad. It is an ideal Ramzan recipe to spice up your experience of food during this month of fasting. This Indian mutton recipe is very popular across the country for its burning peppery taste. It one of the traditional Ramzan recipes coming out of the cultural crucible of Hyderabad where the Southern spices unite with Mughal flavors to give us an unique blend. This Indian mutton curry recipe is representative of that blend that we call Nizami food.

Coming from the royal kitchens of the Nizam dynasty this is an Indian mutton recipe steeped in grandeur and obviously elaborate cuisine. But as a Ramzan recipe, Gosht Masala can be made quickly in an abbreviated form for your convenience. You need no royal ingredients for making it and you can make it easily at home for a family during the holy month of fasting. As your friends and family converge on this sacred occasion make sure you surprise them with a delicacy they haven't imagined.

Ingredients For Gosht Masala:

1. Mutton 500 grams (medium sized pieces)
2. Curd 100 grams
3. Ground Pepper 3 tablespoons
4. Onions 2 (thinly sliced)
5. Garlic 5 cloves (chopped)
6. Ginger ' inch pieces 5
7. Green chillies 4 (finely chopped)
8. Peppercorns 10
9. Star Anise 4
10. Cloves 5
11. Cardamom 4
12. Cinnamon sticks 2
13. Cumin seed 1 teaspoon
14. Bay Leaf 1
15. Red chilli powder 1 teaspoon
16. Cumin powder 2 teaspoons
17. Oil 4 tablespoons
18. Salt as per taste

Procedure For Gosht Masala:

  • Marinate mutton with curd, red chilli powder, cumin powder, ground pepper and salt. You can leave it for an hour or two.
  • Heat oil in a deep pan. Singe the bay leaf, cumin seeds, peppercorns, cloves, cardamom, cinnamon sticks and star anise in the oil for about a minute.
  • Saute the onions till they are golden brown and add garlic and ginger later. Cook for 2 minutes.
  • Pour the marinated mutton into the pan and stir well.
  • Let it cook for 8 minutes by when the gravy will be cooked.
  • Transfer it to a pressure-cooker; add two cups of water and cook for the duration of 4 whistles.

Your Gosht Masala is ready and you can serve it with steamed rice or biriyani to your guest for Ramzan dinner.
