Potage Parmentier Recipe: Classic French Potato And Leek Soup
Potage parmentier is a vegetarian leek and potato soup that hails from the French cuisine. Here is a detailed step-by-step procedure on how to make potage parmentier.
Potage parmentier soup is basically a French soup made from leek and potato. Leek is a vegetable which looks close to spring onions or green onions.
In India, you do not find leeks quite easily, so you can also use green onions for the same. Leeks are sweeter and have a subtle flavour; but on the other hand, green onions are a little strong in taste.
The incredible taste of thyme with soft creamy potatoes and butter sautéed green onions will give this soup an amazing texture and divine taste.

Vegetable oil - 2 tbsp
Medium potatoes (roughly chopped) - 4-5
Leeks or green onions - 3 large
Vegetable stock - 4-5 cups
Heavy cream - 1 cup
Salt to taste
Chopped parsley or thyme - ½ cup

1. Take a large stock stockpot and put 2 tablespoons of vegetable oil in it.
2. Now, heat the oil in a large stockpot over medium heat for a minute or two.
3. Add the leek/green onions and potato in the pan and cook, stir occasionally, until the vegetables have begun to soften and turn brown slightly, for about 8 to 12 minutes.
4. Once the vegetables are done, add the vegetable stock you have and bring it to a boil.
5. Reduce the heat to low, and simmer for 30 to 40 minutes, or until the vegetables turn tender.
6. All we need now is a nice blender, in which we have to blend everything until we get a smooth mixture. Make sure to cool the mixture for a while and then blend the same.
7. Now, add fresh cream to the fine blended mixture, and season it with your favourite seasoning to taste with.
8. Your soup is ready to be served in bowls, and you can garnish it with chopped parsley or thyme.
- 1. The fresh cream actually brings out the taste of the soup. Cream will add taste and make the soup a little thick.
- 2. You can also use butter in case you don’t have cream.
