Moong dal kosambari is an authentic salad of Karnataka fame and is prepared mainly during festivals. It is also a part of the full thali meals in the Kannada cuisine. Kosambari is a salad which is made from soaked moong dal and other vegetables like carrot, cucumber and raw mango. It is the same as, or similar to, the Maharashtrian salad called the moong dal koshimbir.
The hesaru bele kosambari is easy and quick to make at home. This is a protein-packed salad and can be consumed as a part of the staple vegetarian diet. MOONG DAL KOSAMBARI RECIPE VIDEO

Soaked moong dal - 200 g
Cucumber (peeled and chopped) - half a medium size
Carrot (peeled and grated) - 1 medium size
Raw totapuri mango (chopped) - ¼th cup
Coconut (grated) - 2 tbsp
Ginger (grated) - ¼th of an inch
Green chillies (chopped) - 1 tsp
Oil - 1 tbsp
Mustard seeds - 1 tsp
Asafoetida (hing) - ¼th tsp
Curry leaves - 5-6
Lemon juice - ½ a lemon squeezed
Salt to taste
Coriander (chopped) - 1 tbsp

1. Add the soaked moong dal in a bowl.
2. Add cucumber, carrot and raw totapuri mango to the bowl.
3. Then, add coconut, ginger and green chillies to it.
4. Add oil to a heated pan, and then add the mustard seeds.
5. Once it starts sputtering, add the curry leaves and asafoetida to prepare the tadka (tempering).
6. Pour the tadka to the salad.
7. Add lemon juice and salt.
8. Mix all the content thoroughly.
9. Add coriander on top and mix well again.
- 1.Wash the moong dal thoroughly before soaking it.
- 2.Soak the moong dal for an hour and drain out the excess water.
- 3.Add salt at the end, so that the water doesn't come through.

STEP BY STEP - HOW TO MAKE MOONG DAL KOSAMBARI
1. Add the soaked moong dal in a bowl.

2. Add cucumber, carrot and raw totapuri mango to the bowl.



3. Then, add coconut, ginger and green chillies to it.



4. Add oil to a heated pan, and then add the mustard seeds.


5. Once it starts sputtering, add the curry leaves and asafoetida to prepare the tadka (tempering).



6. Pour the tadka to the salad.

7. Add lemon juice and salt.


8. Mix all the content thoroughly.

9. Add coriander on top and mix well again.
