Aloo Palya Recipe: How To Prepare Karnataka-style Potato Curry
Aloo palya is a popular side dish that hails from Karnataka, which is prepared regularly in every household. Here is a detailed preparation method with images and a video.
Aloo palya recipe is a famous Karnataka side dish recipe that is prepared in every household. Also known as the aloogadde palya, this dish is prepared by cooking potatoes with a whole load of spices.
The Karnataka-style potato curry generally goes well with rice, roti and poori, but is also used as a masala to make masala dosa. This mouth-watering potato curry can be used as a filling for samosas as well.
Generally, the masala for the potato palya is added while cooking the potatoes, whereas in this recipe, we are adding the masala at the end to give it a flavourful aroma. This potato curry recipe is a quick and easy one to prepare.

Potatoes - 4
Water - 2 cups
Oil - 1½ tsp
Onions (sliced) - 2
Tomatoes - 2
Salt to taste
Turmeric powder - a pinch
Chilli powder - 2 tsp
Cinnamon sticks - 2 half-inch sticks
Cloves - 3-4

1. Add the potatoes into a pressure cooker.
2. Pour water and pressure cook it for up to 2 whistles and allow it to cool completely.
3. Take the potatoes from the cooker and peel off the skin.
4. Break and mash it into small pieces with your hands.
5. Meanwhile, take oil in a heated pan.
6. Add onions and saute till it turns light brown.
7. Add the tomatoes and a pinch of salt.
8. Saute it well and cover it with a lid.
9. Cook for 5 minutes until the water from the tomato evaporates.
10. Add turmeric powder, red chilli powder and salt to taste.
11. Mix well.
12. Add the cinnamon sticks and cloves in a mortar and crush it using a pestle.
13. Add it to the potatoes and mix again before serving.
- 1. This dish can be prepared without onions, in case of any Vrat or fasting.
- 2. Add the crushed masala at the end to retain the aroma of the spices.

STEP BY STEP - HOW TO MAKE ALOO PALYA
1. Add the potatoes into a pressure cooker.
2. Pour water and pressure cook it for up to 2 whistles and allow it to cool completely.
