Mutton Shorba For A Healthy Ramzan
Shorba is basically an Arab recipe. It is a type of mutton soup that is popular in the gulf. However, we have borrowed the shorba recipe from the Arabs and made it our own. It makes a very healthy recipe for Ramzan. Shorba is basically a special mutton soup with which you can have Lebanese bread called 'kaboos'. You can also have shorba with Indian bread of roti.
Shorba is the perfect Ramzan recipe because it is bacisallya light mutton soup. If you break your fast with shorba then you will not have any indisgestion or acidity problems.

Preparation Time: 10 minutes
Cooking Time: 35 minutes
Ingredients
- Mutton- 500 grams (cut into medium sized pieces)
- Cloves- 5
- Cinnamon stick- 1 inch
- Bay leaf- 1
- Onion- 1 (chopped)
- Ginger garlic paste- 2tbsp
- Tomato puree- 1/2 cup
- Pepper power- 1tbsp
- Cumin powder- 1tsp
- Red chilli powder- 1tsp
- Coriander powder- 1tsp
- Almond paste- 1/2 cup
- Oil- 2tbsp
- Salt- as per taste
- Coriander leaves- 1/2 cup (chopped)
- Lemon- 2 slices
Procedure
1. Heat oil in a deep bottomed pan. Season it with cloves, cinnamon sticks and bay leaf. Fry for 30 seconds.
2. Then add the chopped onions and saute till they turn golden brown. Now pour the ginger garlic paste and mutton into the pan, and cook for 5 minutes on medium flame. When all the water released from the mutton evaporates and oil starts floating, add tomato puree.
3. Season with salt and all the powdered spices like pepper, cumin, red chilli and coriander. Fry for 2-3 minutes on medium flame.
4. Now add 3 cups of water, cover and cook for 10 to 15 minutes on low flame.
Squeeze the lemon into the mutton shorba and garnish with chopped coriander leaves. Serve with Arabic bread and chopped raw onions to go with it.
