Palak Chicken: Healthy Microwave Recipe

This Indian microwave recipe allows you to make this famous Indian curry that you ordered in restaurants at home. The ingredients for this spinach chicken recipe are few and readily available so you don't have to break your head over finding them. Try it for a healthy meal of chicken and vegetables blended together in perfect harmony.
Ingredients For Palak Chicken:
1. Chicken 500 grams (cut into medium sized pieces)
2. Spinach (Palak) 2 bunches (about 100 grams)
3. Curd 100 grams
4. Green chillies 4 (paste)
5. Onions 2 (finely chopped)
6. Ginger Garlic paste 1 tablespoon
7. Coriander leaves ' bunch
8. Ground pepper 2 tablespoons
9. Pepper corns 5
10. Cinnamon sticks 2
11. Bay leaf 1
12. Garam Masala powder
13. Butter 2 tablespoons
14. Salt as per taste
Procedure For Palak Chicken:
- Marinate the chicken with curd, ginger garlic paste and salt for at least an hour.
- Boil water in the microwave for 3 minutes on full power and add the coriander leaves in it.
- Boil it for another two minutes on full power and then add the spinach. This is because the spinach leaves break easily and quickly.
- Strain the boiling water after a minute and soak the green leaves in cold water to take away the heat.
- Make a paste out of these boiled softened leaves and green chillies in the mixer-grinder.
- Now melt butter in a microwavable bowl for 2 minutes on maximum power. Add pepper corns, bay leaf, cinnamon sticks and ground pepper to the molten butter. Mix it well and microwave on 80 percent power for another 2 minutes.
- Add the chopped onions and microwave for 4 minutes on 80 percent power. Then add the marinated chicken pieces and cook for 4 minutes on 80 percent power.
- Now pour the paste of spinach, coriander leaves and green chillies over the chicken pieces. Mix it well; cover and cook for 10 minutes. You need not add water because spinach will release water on cooking.
- Add some garam masala powder in the end and give it standing time for 5 minutes.
You can garnish palak chicken with fresh cream or mayonnaise.
