Sumptuous Punjabi Anda Masala Recipe
When you are alone at home or reach home late and don't feel like cooking, egg comes to your rescue. It is one of the easiest ingredient to cook and experiment with. It can eaten all by itself or can be prepared with spicy curries. However you cook eggs, they just taste delicious. The best part is they are the most loved food item of the kids which is healthy too.
So, today we have an exotic egg recipe for your to try. Punjabi anda masala is a simple and lip-smacking recipe which you can easily prepare in very less time. Just keep the boiled eggs ready and cook them up with a blend of exotic Indian spices.

Ingredients
- Eggs- 4 (boiled and peeled)
- Onion- 1 (sliced)
- Bay leaf- 1
- Cumin seeds- 1tsp
- Tomato puree- 1tbsp
- Red chilli powder- 1tsp
- Coriander powder- 1tsp
- Turmeric powder- ½ tsp
- Amchoor (dry mango) powder- 1tsp
- Kasoori methi- 1tbsp (crushed)
- Salt- as per taste
- Garam masala powder- ½ tsp
- Oil- 2tbsp
- Water- 1 cup
For Masala Paste
- Onion- 2
- Green chillies- 2
- Ginger- 1 medium sized piece
- Garlic- 5 pods
- Cloves- 2
- Cinnamon stick- 1
- Fennel seeds- 1tsp
- Tomatoes- 2
Procedure
1. Grind all the ingredients listed under 'Masala Paste' together in a mixer and keep it aside.
2. Heat oil in a pan and add cumin seeds, bay leaf, sliced onion. Fry for 3-4 minutes on medium flame.
3. Then add the turmeric powder, red chilli powder, coriander powder, dry mango powder, tomato puree and fry for another 4-5 minutes.
4. Now add the prepared masala paste and cook for 5-6 minutes.
5. Add salt, garam masala powder and cook for 2-3 minutes.
6. Now add water and the boiled eggs to it. Mix well.
7. Bring the gravy to a boil and cook for 5-6 minutes on medium flame.
8. Crush the kasoori methi between your palms and add to the gravy.
9. Mix well and then switch off the flame.
Delicious Punjabi anda masala is ready to be served. Enjoy this sumptuous dish with jeera rice or parathas.
