Thekua is one of the famous dishes of Bihar. It is usually prepared during the Chhath Puja and is widely loved by people throughout the country. It is prepared using wheat flour, ghee and jaggery.
Since it isn't prepared using sugar, one can definitely consume it without worrying about the consequences of consuming dishes containing sugar. One can have this dish with tea, coffee or as an item for binge-eating. It is not only delicious in taste but also quite healthy to eat.

Ingredients

- 500 grams wheat flour
- 300 grams jaggery
- 2 teaspoon ghee
- 2 cups separate ghee for frying
- 2 cups of water
- 1 teaspoon cardamom powder
- 1/2 cup grated coconut
- 1 teaspoon fennel seeds

- In a kadai, heat 1 cup of water and add jaggery into it. The jaggery needs to be melted in order to form a syrup.
- Once the jaggery melts completely and starts to thicken a bit, turn off the gas flame and allow it to cool down.
- Meanwhile take the wheat flour in a large mixing vessel or bowl.
- Add 2 teaspoons of ghee into it. Make sure the ghee isn't in the solid form.
- Mix the flour and ghee well so that both combine well.
- When you mix the ghee in the flour try holding the flour in your fist to check if the flour stays.
- Add 1 teaspoon of fennel seeds along with the cardamom powder.
- Add half a cup of grated coconut into the flour and mix everything well to form a breadcrumb like consistency.
- Now knead the flour into a firm dough by adding water in little quantities.
- Make sure the dough isn't too soft or too hard. It should be flexible and firm.
- Once the dough is formed, take small portions of dough and roll them into round balls.
- Take the thekua shaper and smear some ghee over it.
- Press the dough balls flat on the thekua shaper and keep the pressed thekua aside.
- Repeat the same process with the rest of the dough balls.
- Once you have shaped all the thekuas, turn off the gas flame and heat 2 cups of ghee in a frying kadai.
- Once the ghee gets heated on medium-high flame, deep fry the thekuas as per the capacity of the kadahi.
- Repeat the process until all the thekuas are deep fried.
- Serve thekuas to your guests with evening tea.
- You can also store them for 3-4 weeks in a airtight jar.

- Once the jaggery melts completely and starts to thicken a bit, turn off the gas flame and allow it to cool down.
