How To Prepare Cheesy Healthy Vegetable Quesadilla For Your Kid's Lunch Box
Quesadilla, as the name itself suggests, is a Mexican snack made of flour tortilla filled with cheese which is folded or cut into wedges and then consumed. A quesadilla also has fillings made of beans, or potatoes, and always has cheese added as a mandatory ingredient. Veg quesadilla is deliciously vegetarian and most of the time, comes with a heavenly bounty of crispy textured vegetables with the usual spread of cheese that just melts the moment you pop it in. A rich medley of Vegetables and cheese are not only filling and tasty but carry significant health benefits as well. This dish is versatile in its uses, and can be used any time as breakfast, lunch, dinner or snack.

Quesadillas take around 30 minutes of your time and can be served along in any meal combination and hence can be treated as absolutely no-fuss preparations. Add as many vegetables as you can squeeze in to this dish. Do not overcook the veggies as they have to remain crispy for a better tasting Quesadilla. Add some chilli flakes to make it all the more piping hot. Although of Mexican origin, it has caught the fancy of all gourmets the world over.

Vegetables of your choice- 2 cups
Pepper powder-2 tsp
Mozzarella cheese grated- 1 cup
Butter-2 tbsp
Salt to taste
Sweet and sour tomato ketchup
8 flour tortillas

Saute vegetables in a wok.
Sprinkle salt and pepper over this.
Place tortilla on a plate, pour tomato ketchup and some cheese
Place vegetables on top of the cheese.
Again sprinkle cheese, salt and pepper over this mix.
Place one more tortilla on the top of this mixture and press the edges so that the stuffing does not spill over.
Pour 1 tbsp of butter on a skillet.
Cook the tortilla for about 2 minutes till it turns light brown
Cook both sides. Repeat the process with the rest of the tortilla.
Dip it in ketchup and salsa sauce.
