Ingredients
- 14 oz (396g) sweetened coconut flakes
- 1 can (14 oz / 396g) sweetened condensed milk
- 2 egg whites, whipped to stiff peaks
- ⅛ tsp salt
- 1 tsp vanilla extract
- 2 cups (340g) semi-sweet chocolate chips
How to Make Them
- Preheat your oven to 325°F (165°C).
- Line a baking tray with parchment paper or a Silpat mat.
- In a large bowl, stir together the coconut, condensed milk, vanilla, and salt until evenly combined.
- In a separate bowl, whip the egg whites until they form stiff peaks.
- Fold the egg whites into the coconut mixture in three additions, gently incorporating to keep the mixture light.
- Using a medium cookie scoop, portion out 9 mounds of batter onto the tray.
- Bake for 25 minutes, or until golden around the edges. Cool completely.
- Melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring between each until smooth.
- Dip the base of each cooled macaroon about ¼ inch into the chocolate. Let the excess drip off.
- Place dipped macaroons on a clean parchment-lined tray to set.
- For faster results, chill the tray in the fridge for 30 minutes.
- Store in the refrigerator until ready to serve. Let them sit at room temperature for 10-15 minutes before eating.

Ingredients
- 6 large eggs
- 3 tablespoons mayonnaise
- 1 tablespoon full-fat plain yogurt (or sour cream)
- 1 teaspoon Dijon mustard
- ½ teaspoon white vinegar
- ¼ teaspoon fine sea salt
- ⅛ teaspoon freshly cracked black pepper
- Paprika, for garnish
Putting It Together
Boil the eggs
Place the eggs in a saucepan and cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover, turn off the heat, and let sit for 17 minutes.
Cool and peel
Drain the eggs and place them in an ice bath to cool for at least 5 minutes. Peel carefully to avoid tearing the whites.
Prepare the filling
Slice each egg in half lengthwise. Gently pop out the yolks and place them in a mixing bowl. Mash with a fork until smooth.
Add flavour
Stir in mayonnaise, yogurt, Dijon mustard, vinegar, salt, and pepper. Mix until creamy and lump-free. For best results, use a hand mixer for a smoother texture.
Fill and garnish
Spoon or pipe the filling back into the egg whites. Dust the tops with paprika for a pop of colour and subtle heat. Serve chilled.
