Dishes From The Kashmiri Wazwan
Kashmiri wazwan is the local term for a full course Kashmiri meal. The entire wazwan includes some of the most delicious dishes of the Kashmiri cuisine. The total number of dishes in the Kashmiri wazwan can go up to 36 or 40. However, 7 of these dishes are absolutely necessary to call the meal a kashmiri wazwan.
These 7 dishes of the Kashmiri wazwan are rather common. There is tabaz maaz (a type of kebab), rista , rogan josh, daniwal korma, marchwangan korma, aab gosh and gustaba. Kashmiri cuisine is rich in meat dishes. The people of Kashmir are famously known as meat eaters, and mutton or red meat is preferred by them. That is why almost all the dishes in the Kashmiri wazwan are meat based.
Kashmiri food is notorious for its content of spices. Most of the dishes in the wazwan are very spicy. These dishes are usually eaten with rice, which is the staple food of Kashmiris. The culture in Kashmir is to sit in groups of four and relish the meal from a large platter.
Here are some of the most delicious and important dishes of the Kashmiri wazwan.

Rista
Rista is a dish that comprises soft meat balls cooked in a spicy red curry. The red colour of the curry comes from ground red chillies.

Tabak Maaz
Tabak maaz is a is dish of lamb ribs that are cooked in milk and braised in butter.

Rogan josh is a mutton curry that is prepared without onions and garlic. It gets it fiery flavour from asafoetida and a herb named ‘ratanjot'.

Gustaba is a dish made of meat balls simmered in a thick yoghurt. It is usually served at the end of the wazwan.

Daniwal Korma
Daniwal korma is a mutton curry that is cooked with plenty of dhaniya or coriander powder.

Kabab
The most common style of kabab is the typical sheek kebab. Minced lamb meat is roasted on skewers or sheeks.

Lahabi Kebab
Lahabi kebab is a fattened kebab made of minced meat. This kebab is cooked and flavoured with lots of yoghurt.

Yakh'n
This is a curry for vegans. It is a yoghurt curry that is flavoured with an assortment of Kashmiri spices.

Aab Gosh
Aab gosh is a mutton curry cooked in milk. It is usually not very spicy.

Marchwangan Korma
This is the spiciest dish on the platter. Marchwangan korma is a chicken or mutton curry looked with lots of mirchi or chillies.

Nadir Palak
Kashmiris are known for cooking the lotus stem deliciously. Nadir palak is a combination of lotus stem and spinach leaves.
