You must have heard that green leaves are important for maintaining a good health. Green leaves are sometimes ignored by most of us and they are thrown away without knowing their nutritional value. An example is cauliflower leaves, they are usually thrown and cauliflower is cooked.
Cauliflower leaves are richest source of calcium, iron and contain all the B vitamins. They can fulfill all the nutritional needs. Green leaves are rich in antioxidants, vitamins and minerals.

You must include green leaves in your diet as they can also elevate your taste buds such as mustard leaves (sarson ka saag). Apart from being a nutritional supplement they can also be a tasty dish.
You must wash your green leaves well before cooking them or eating them raw as a salad. However, don't wash them after chopping as many nutrients are lost. Use them immediately after chopping.

Cauliflower Greens
You might usually throw away cauliflower greens but next time don't throw them as they have many health benefits. They are rich in calcium, iron and all B complex vitamins. They are good for your brain and can prevent depression. Cauliflower leaves make your bones healthy and increase haemoglobin level as well.
Turnip Greens
It must be given to those who have low haemoglobin levels. It is rich in folate and iron. It is also abundant in calcium, vitamin C and vitamin K.
Fenugreek Leaves
It is good for those who have kidney issues as it contains low amount of potassium. Fenugreek leaves are also rich in vitamin C, k and A. It boosts your immunity and maintains a good health.
Radish Leaves
They are rich in beta carotene (inactive form of vitamin A) vitamin K and C. They also contain calcium and fiber. You should not throw them away as they are good for bones, eyes, blood and immunity.
Dill Leaves
People don't use it because of its pungent flavour, however if it s used in a less and moderate amount its flavour can be managed. It is rich in calcium, iron, vitamin C and folate. It is best to cure anaemia and good for overall health.
Coriander Leaves
They have a rich flavour, without this all Indian cuisines are incomplete. They are healthy as well as rich in calcium, folate, vitamin C and K.
Mustard Leaves
It is prepared as a tasty dish in northern India known as sarso da saag. It is tasty and healthy Indian green dish that is eaten as a delicacy. It is good for bones, increases haemoglobin level and also immunity.
Drumstick Greens
It is usually taken as a nutritional supplement along with drumsticks. When taken with drumsticks they alleviate anaemia as they are the perfect combination of vitamin C and iron. It is also rich in magnesium, calcium, vitamin B12 and protein. This is one of the healthiest Indian green vegetables.
