Stuffed Potato With Vegetables: Healthy & Tasty Dish

Vegetables stuffed potatoes, filling snacks recipe:
Ingredients
- 4-5 potatoes, boiled and peeled
- 2-3 onions chopped finely
- 1 capsicum chopped
- 1 ' carrots chopped
- 1 tbsp peas
- 1 small tomato chopped
- green chillies minced
- 2 tsp chopped garlic
- chaat masala
- turmeric powder
- red chilli powder
- black pepper powder
- salt
- tomato ketchup
- oil
- cumin seeds
- coriander leaves and grated cheese for garnishing
Directions to make vegetables stuffed potatoes recipe:
1. Cut the boiled potatoes into two pieces in length and use a spoon to gently scoop the inside. Keep the potatoes aside. You can even fry the boiled potatoes before cutting them to make it crisp. However, boiled potatoes are more healthy and doesn't have much calories.
2. Heat oil in a pan and add ' tsp cumin seeds. When the seeds start to sprinkle, add garlic, onions, peas, capsicum and carrots. Mix well and cook till the vegetables become tender. Add green chillies, salt and turmeric powder in it. Cook for a minute.
3. Now add chaat masala, red chilli powder, black pepper powder and tomato. Cook for 1 minute and then add tomato ketchup. Saute well to make a stuffing paste. Take it off flame.
4. With the help of a spoon, add the stuffing in the potatoes and garnish with grated cheese and coriander leaves.
Vegetables stuffed potatoes are ready to eat. Enjoy this filling snack recipe with chilli sauce or parantha or rice.
