Roasted New Potatoes Recipe
New potatoes are fresh harvest of the season. You can find those thin and crisp skinned new potatoes in the market. These young potatoes are not fully developed, small and tastes sweet. There are many varieties of new potatoes that are available in the market. Jersey Royals, Pentland Javelin and salad potatoes are the most popular varieties.
There are many side dishes that you can prepare using new potatoes. You do not need to peel these new potatoes. Just make sure they are washed properly so that the dirt is removed. Most importantly, new potatoes cook very easily. So, if you want to prepare some easy recipes using new potatoes, you can try roasted potatoes recipe. The recipe to prepare this side dish is very simple and you need very few ingredients like garlic, olive oil and roasted cumin seeds. Check out this crisp side dish recipe.

Roasted new potatoes, side dish recipe:
Serves: 2-3
Preparation time: 5 minutes
Cooking time: 35 minutes
Ingredients
- New potatoes- 6-8 (yellow skinned, washed and cut into quarters)
- Garlic- 2 pods (minced)
- Roasted cumin seeds- 2tsp
- Black pepper powder- 1tsp
- Salt- as per taste
- Olive oil- 1tbsp
Procedure
- Pre-heat the oven to 450 degrees F.
- Mix potatoes with salt, black pepper powder and roasted cumin seeds.
- Add olive oil and garlic. Mix all the ingredients till potatoes are coated completely.
- Spread the potatoes on the baking dish and roast for 15-20 minutes (till the potatoes turn crisp and look brown).
Roasted new potatoes are ready to eat. Serve them hot with rice or rotis. If you want, you can even add grated cheese to have roasted new potatoes as an appetizer.
