Mangodi Ki Sabzi
INGREDIENTS :
10 - 15 Mangodi (dry lentil paste pieces)
1 big bunch Spinach or Fenugreek Leaves
Salt to taste
1 tsp Turmeric powder
1 tsp Cumin Seeds
e tsp Hing (Asafoetida)
1e tsp Red Chili powder
For Mangodi :
e Kg Green gram dal
2 inches Ginger piece
7 - 8 Green Chilies
e tsp Hing (Asafoetida)
METHOD :
To make Mangodi's:
Soak Green gram dal overnight. Next day drain it and grind with Ginger, Chilies and Hing to a paste. Grease a polythene sheet and pour a spoonful of the paste all over the sheet and let it dry in the sun for a day or two. Store them in airtight jars.
Crush the Mangodi's. Heat Oil and shallow fry Mangodi's until brown. Boil 2 cups water in a pan. Add cleaned and chopped Spinach or Methi leaves. Add Salt and Turmeric powder. Add Mangodi's and cook till done. Heat 1tsp Oil and add Cumin seeds, Hing and Red Chili powder. Add this seasoning to the mixture and mix well.
Serve hot with Rice or Roti's.
