All You Need

  • Small Baby Corn - ½ kg (chopped)
  • Capsicum/Green pepper - 1 (sliced)
  • Onion - 1 (grated)
  • Tomato - 1 (chopped)
  • Pepper powder - 2 tbsp
  • Turmeric Powder - ½ tsp
  • Green Chilli - 1 (sliced)
  • Salt To Taste
  • Oil - 1 tbsp
  • Water - ½ cup

Procedure

  1. Add oil to the pan. When hot, add the green chilly.
  2. Fry the chilly till a white coating is seen over it.
  3. Now add the grated onions to the pan and fry till golden-brown in colour.
  4. Add the chopped tomatoes and fry it well with the onions.
  5. Simmer the stove and allow the ingredients to cook well.
  6. Add in the pepper powder and turmeric powder.
  7. Now add the sliced capsicum, baby corn and fry well with the spices.
  8. Add a little water to the pan, if you see the ingredients turning dry. Allow the veggies to cook well on a low flame.
  9. When almost done add salt to taste.
  10. You can also add hing (asafoetida) for taste.

Nutrition Tip:
Baby Corn has a significant amount of iron which is good for anemic patients. It also has a high amount of folic acid, an essential element for pregnant women.

Tip:
Don't add too much of water while cooking the baby corn. It is a dry recipe.
