Curd Brinjal: A Spicy Delicacy
This is one of the easiest Indian food recipes that you can try making at home. The best part of the brinjal or eggplant recipe is that it requires very less spices and time. If you are in a mood to do something different with your vegetables then this is one of the perfect eggplant recipes for you.
Curd brinjal happens to be one of those eggplant recipes that is liked by all. Even if you mare a novice at the kitchen then try this brinjal recipe and surprise everyone. The curd brinjal recipe is so simple that there are very little chances of its going wrong. Here is the recipe for making curd brinjal.

Preparation Time: 15-10 minutes
Cooking Time: 10-15 minutes
Ingredients
- Brinjal ( Eggplant)- 7-8 small sized
- Turmeric Powder- 1-2tsp
- Sugar- 1tsp
- Onion Paste- 2-3tbsp
- Ginger Garlic Paste- 1½tbsp
- Green Chillies- 2-3 (finely chopped)
- Red Chilli Powder- 2tsp
- Coriander Powder- 1½tsp
- Curd- 2cups
- Coriander Leaves- ½ cup (finely chopped)
- Vegetable Oil- 1 cup
- Salt- To taste
Procedure
- Take the brinjals (eggplants) and slit them from between. Smear them with 1tbsp of the turmeric powder, sugar and some salt.
- Deep fry them in ¾ cup of the vegetable oil in frying pan over a medium flame. Strain the extra oil and keep aside.
- Now pour the remaining oil into the pan and add the onion paste, ginger garlic paste and the green chillies in it. Saute them over a low flame for 3-4 minutes and then add some salt.
- Add the red chilli powder, coriander powder and the remaining turmeric powder into the pan. Saute the whole mixture for at least 2-3 minutes over a low flame.
- Pour the curd in the pan and whisk well. Let all the spices mix well in the curd. Keep stirring on a low flame for 1-2 minutes and then turn off the gas oven.
- Place the fried brinjals (eggplant) on a plate and then pour the spicy curd mixture on them.
- Your curd brinjals are now ready to be eaten. Garnish the curd brinjals with chopped coriander and serve hot.
A dish of curd brinjals goes well with any main course recipe like rice or roti.
