Aloo Kofta: Side Dish Recipe
Aloo or potato is one of the most widely used vegetables in the Indian cuisine. A lot of side dishes are prepared using potatoes. In many households, a dish is incomplete without adding some potato. Be it aloo bhindi or aloo chaat, main course and snacks are incomplete without the presence and flavour of aloo.

Aloo Kofta: Indian Side Dish Recipe

Serves: 3
Preparation time: 15 minutes
Cooking time: 30-35 minutes
Ingredients
1. Potatoes- 6-7 (boiled and peeled)
2. Green chillies- 2-3 (chopped)
3. Ginger- 1 inch (chopped)
4. Tomatoes- 2 (grated)
5. Turmeric powder- 1tsp
6. Cumin seeds powder- 2tsp
7. Coriander powder- 2tsp
8. Red chilli powder- 2tsp
9. Cornflour- 2tbsp
10. Sugar- ½ tsp
11. Cashew nuts paste- 1tbsp
12. Cinnamon- 1 small stick
13. Cloves- 2
14. Salt- as per taste
15. Oil- 2tbsp
16. Water- 2 cups
Procedure
1. In a bowl, mash the boiled potatoes. Add full cornflour, and 1 teaspoon of red chilli powder, cumin seeds powder, coriander powder each, and salt as per taste.
2. Wet your palms and make small round balls of the mix. If you want, you can add few chopped cashew nuts and raisins while preparing the balls.
3. Meanwhile, heat oil in a frying pan. Dip the round aloo kofta balls and fry till they turn brown and look crisp. Be careful while frying and straining as the balls can break easily.
4. Once all the kofta balls are fried and strained, keep them aside.
5. Reduce the flame and add cinnamon, ginger, tomato, cashew nut paste, cardamom and sauté for a minute.
6. Add 1 teaspoon of red chilli powder, turmeric powder, coriander powder, cumin seeds powder, and mix well. Add sugar and mix. Now add salt as per taste. Sauté till the oil separates.
7. Now pour water and simmer for about 10 minutes. Add the koftas and bring it to boil. Cook for another 5 minutes and turn off the flame.
Aloo koftas are ready to eat. Garnish with fresh cream and serve hot.
