Tomato Pudina Rice Recipe – Tasty Rice Dish

Want to try this authentic south Indian cuisine that will perk up your taste buds? Try out the following tomato pudina rice recipe:
Tomato Pudina Rice Recipe – Ingredients
- 1 cup long grain rice (washed and drained)
- 4 medium sized tomatoes
- 4 small sized onions
- 1 cup green peas
- 8-10 cashew nuts soaked in warm water
- 1 small cup freshly grated coconut
- 1 cup mint leaves
- Few strands of fresh coriander leaves
- 5-6 green chillies
- 1 teaspoon red chilli powder
- 1 teaspoon dhaniya powder (coriander seeds powder)
- ¼ teaspoon garam masala powder
- 2-3 cloves
- ' inch cinnamon
- 1 small cardamom
- 2-3 tablespoon oil
- Salt to taste
- Water
Method to prepare tomato pudina rice:
- Grind together 2 tomatoes, 2 onions, coconut, cashew nuts, mint leaves, coriander leaves, green chillies, red chilli powder, garam masala powder, dhaniya powder, cloves, cinnamon and cardamom, to make a paste.
- Finely chop the other two onions and tomatoes.
- Heat oil in a pressure cooker or pan. Add the onions and fry till they turn golden brown.
- Next add the tomatoes and peas and cook well.
- Add the ground masala and cook again till the raw aroma goes.
- Finally add the rice and salt and mix well.
- Add water (1 cup rice = 2 cups water).
- Switch off the stove after the first whistle.
Garnish with nuts and finely chopped coriander leaves. Serve hot and spicy tomato pudina rice with raitha.
