Mumbai Special Tomato Pulao Recipe
Winter is the time for the red, juicy and succulent tomatoes. Though the vegetable is available throughout the year, yet winter tomatoes have a special taste. So, today we have a special rice recipe with tomatoes. It is a specialty of the Mumbai city. This Mumbai special tomato pulao is an easy yet delectable vegetarian recipe.
The Mumbai special tomato pulao or the Bombay tomato pulao is a simple and quick recipe which is perfect for a single meal as well as for your lunch box. You can use the vegetables of your choice to make this recipe more colourful and healthy.

The use of tomato ketchup in this Mumbai special tomato bath gives it a sweet and tangy kick which your kids will definitely love. The best part of this recipe is the sweet, salty, tangy and spicy flavour which makes your taste-buds crave for more of this delicious dish.

All you need
- Basmati rice- 2 cups (cooked)
- Onion- 1 (chopped)
- Ginger-garlic paste- 2tsp
- Tomatoes- 3 (chopped)
- Capsicum- 1 (chopped)
- Paneer- 1/2 cup (diced)
- Fresh green peas- 1/2 cup
- Green chillies- 2 (chopped)
- Tomato ketchup- 1/4 cup
- Red chilli powder- 1tsp
- Turmeric powder- 1/2 tsp
- Pav bhaji masala- 2tsp
- Salt- as per taste
- Oil- 2tbsp
- Coriander leaves- 2tbsp (chopped for garnish)

Procedure
1. Heat oil in a pan and add the ginger garlic paste. Fry for a few seconds and then add the chopped onions. Fry till they turn golden brown.
2. Then add the tomatoes, turmeric powder, red chilli powder, pav bhaji masala and saute for 3-4 minutes on medium flame.
3. Then add the tomato ketchup and cook for another 3-4 minutes.
4. After that, add the capsicum, green chillies, green peas, salt and cook for 4-5 minutes.
5. Add the paneer cubes and stir fry very lightly.

6. Add a cup of water and let all the vegetables cook for 3-4 minutes on medium flame.
7. Now add the cooked rice and mix well.
8. Check the seasoning, switch off the flame and then finally sprinkle the chopped coriander leaves on the rice.
Mumbai special tomato pulao recipe is ready to be served. You can have this rice recipe as a single meal or with curry of your choice.
