Recipe for Pulinji

Pulinji Recipe
Pulinji, one of the favourite tamarind cuisines of Kerala. This yummy side dish is usually served during festivals or special occasions. Try this Kerala cuisine in your kitchen today for lunch.

Ingredients:
Set 1 :
Turmeric Powder: ' tsp
Chilly Powder: ' tsp
Coriander Powder: ¼ tsp
Set 2:
Green Chilly : 4
Ginger: 25 gm
Set 3:
Coconut Oil – 2tsp
Mustard: ' tsp
Fenugreek Seeds – ¼ tsp
Very Small Coconut Pieces – 2 tsp
Curry Leaves – 5 leaves
Red Chilly – 2
Set 4 :
Tamarind – 2 balls that is of the size of 2 gooseberries.
Water – 2 cups
Jaggery – 50 gm
Salt – as required
Set 5:
Boiled Rice – 1 tsp
Fenugreek seeds – ' tsp
Mustard Seeds – ¼ tsp
Small Cumin Seeds – a pinch
Big Cumin Seeds – a pinch
Saute these ingredients until golden brown, in a low flame and grind it and keep it aside.

Method:
Put the set 4 ingredient, tamarind in two cups of water and mix well. Now squeeze and take the liquid.
Saute set 2 in coconut oil for a minute. Add the tamarind liquid in it.
Add the set 1 ingredient to this.
Wait for the mixture to boil for 2 minutes and add set 5 ingredients to it.
Add the set 4, ingredient, Jaggery in this and keep for 3 minutes and add salt.
Boil it until it becomes thick, now remove from the stove and keep it aside.
Now saute the set 3 ingredients, mustard, fenugreek seeds, very small coconut pieces, curry leaves and red chilly in coconut oil and add to this.
