Spicy Tomato Cashew Curry – Diwali Special!

The tomato cashew curry is a classic curry that taste best with normal sambar powder or the chettinad spice or with even the italian spice. The ingredients are basic and are generally available at home. Take a look to know how to go about with the tomato curry recipe. The best part about the curry is its versatility, it tastes best with rice, roti, appam or even bread!.
Tomato Curry Ingredients:
- ' kg tomatoes (chopped)
- 2 tsps fresh ginger paste
- 1 cardamom
- 1 piece of cinnamon
- 1 clove
- 1 cup cashews
- ' cup coconut
- 1 tsp garam masala
- 1 tsp red chilli powder
- Pinch of sugar
- Salt according to taste
- 1 tsp mustard seeds
- 1 tsp jeera
- 2 tsps oil
Making Of Tomato Cashew Curry:
1. To start with, use some tomatoes for the masala. Add tomatoes, ginger paste, cardamom, cinnamon, clove, 3-4 cashews, coconut to the mixer grinder and grind it into thick paste.
2. Heat a pan and add a teaspoon of oil. Once the oil is hot fry the mustard seeds with jeera.
3. Once the seeds splutter, add the ground paste, sugar, salt and stir until the masala boils.
4. Spice up the boiling curry by adding garam masala and chilli powder. Add the tomatoes and cashews to the mixture and cook it until the chopped tomatoes turn soft. Tasty indian curry recipe is ready.
