Yellow Squash Chutney Recipe – Simple Chutney With A Difference!
Ingredients:

  1. 2 cups of yellow squash (peeled, chopped)
  2. 2 tbsps toor dal
  3. 1 tbsp urad dal
  4. ¼ tbsp methi seeds
  5. 1 tbsp tamarind paste
  6. 3 dried chili peppers
  7. 1 tbsp ginger (chopped)
  8. 2 tbsp coriander leaves (chopped)
  9. 1 tsp asafoetida
  10. ' tsp mustard seeds
  11. 1 tbsp cooking oil
  12. Salt as per requirement
  13. Curry leaves for garnish

How To Make Yellow Squash Chutney?

  1. In a pan, heat oil and fry toor dal, urad dal, methi seeds until they turn light brown.
  2. Add red chilies, ginger, coriander leaves, chopped yellow squash, tamarind paste, salt, asafoetida and cook for 5-10 minutes.
  3. Grind the mixture into fine paste in a blender.
  4. Garnish with fried mustard seeds and curry leaves. Tasty variety chutney recipe is ready to serve.
