Spicy Egg Bhurji: Indian Recipe
Somehow, we always get tempted to prepare egg dishes especially omelette for breakfast. Not simply because it is easy to prepare, but also one of the dishes we are used to eat. Eggs are often used for preparing breakfast recipes worldwide. How can the Indians lag behind? There are many egg recipes that can be prepared for the Indian breakfast. The desi style recipes are tempting and spicy too! Egg bhurji or the scrambled egg is a delicious breakfast recipe.

Spicy egg bhurji, Indian style scrambled eggs recipe:

Serves: 2
Preparation time: 5 minutes
Cooking time: 5-10 minutes
Ingredients
- Eggs- 3-4
- Onion- 1 (chopped)
- Tomato- ½ (chopped)
- Basil leaves- a pinch
- Green chillies- 2 (chopped)
- Chaat masala- 1tsp
- Red chilli powder- 1tsp
- Pepper powder- ½ tsp
- Parsley- 1tsp (chopped)
- Tomato sauce- 1tsp
- Cumin seeds- a pinch
- Salt- as per taste
- Oil- 1tbsp
Procedure
- Break the eggs in a bowl and whisk until smooth.
- Heat oil in frying pan. Season with cumin seeds.
- When the seeds start to splutter, add the onions and saute for 3-4 minutes on a high flame.
- Once the onions start turning dark brown, add tomatoes, green chillies, salt and mix well. Cook on a low flame for 2-3 minutes till the tomato slices become tender.
- Sprinkle chaat masala, pepper powder, red chilli powder, tomato sauce and mix well.
- Add the whisked eggs and mix well till they scramble completely. Cook for another 2 minutes on a high flame.
Spicy egg bhurji in Indian style is ready to eat. Serve it hot with toasted bread or rotis.
