Cucumber Idlis

Ingredients:
1 Cup Rice, Soaked for 4 hours
2 Cups Cucumber, grated
Ï¿Ï¿Ï¿' Cup Coconut, grated
Ï¿Ï¿Ï¿' Cup Coconut, Chopped
3 Green Chilies
Salt to taste
1tsp Asafoetida
3tbsp Coriander Leaves, Chopped
2tbsp Curry Leaves, Chopped

For the Seasoning :
1tsp Ghee
1tsp Mustard Seeds

Method:
Grind Rice, Asafoetida, Green Chilies and Coconut to a thick batter. Add Cucumber, Coriander Leaves, Curry Leaves, Chopped Coconut pieces and Salt.

Heat Ghee, add Mustard Seeds and when they splutter remove and add to the batter. Mix well.

Grease Idli plates and pour the batter into the moulds and steam for 15 minutes. Remove and serve hot with your choice of Chutney.
