Basundi: Special Sweet Recipe For Eid
We are less than a week away from the most celebrated festival of Eid. We are sure you must have started your Eid shopping and are getting ready for the celebrations. Whenwe talk of Eid, we can only think of good food and especially delectable sweets. Seviyan, sheer khurma, shahi tukda etc. Are some of the most awaited sweet recipes which we get to relish during the festival. But how about trying some new sweet recipe for your Eid guests this year?
Basundi is a special sweet recipe which is very similar to kheer. This indian dessert recipe hails from the state of Maharashtra. The rice is soaked in water, then coarsely ground and cooked in milk with a mix of dry fruits. This sweet recipe is served chilled and is relished by almost everyone who has a sweet tooth.

Serves: 3
Preparation time: 4 hours
Cooking time: 20 minutes
Ingredients
- Basmati rice- 1 cup
- Milk- 1/2 litres
- Condensed milk- 1/2 cup
- Ghee- 1tbsp
- Chopped almonds, cashews, pistachios, walnuts and raisins- 1tbsp each
- Oil- 1tbsp
- Sugar- 8tbsp
- A pinch of saffron soaked in ¼ cup warm milk
Procedure
1. Wash and soak the rice in water for 4 to 5 hours. Grind it coarsely and set aside. Heat ½ cup of water in a pan and add the coarse rice paste to it. Bring it to a boil and cook for about 5 minutes while stirring continuously.
2. Then add milk and keep stirring to prevent the rice from sticking to the pan. Add ghee and mix well.
3. Once the rice is cooked, add sugar and stir for 1 to 2 minutes.
4. Next add condensed milk and mix well. If it is very thick, then boil 1 or 2 cups of water in another pan and add to this pan.
5. Now add saffron soaked in warm milk and stir well.
6. Once all the ingredients are well mixed, switch off the gas.
7. Finally to roast the nuts and raisins, heat oil in a non stick pan and stir fry the nuts till golden. Add this to the basundi and mix well.
8. Mix well and pour into serving bowls.
Serve the basundi hot or cold. Refrigerate for 2 to 3 hours for better taste.
