Spicy Tomato And Bread Soup
Ingredients:
- Four bread slices (white portion, cut into squares)
- 2-3 garlic cloves (peeled, chopped finely)
- 3 big tsps of olive oil
- 1 onion (coarsely ground)
- Fresh basil leaves (chopped)
- 4-5 tomatoes (pureed)
- 4 cups vegetable stock/ chicken stock
- Salt according to taste
- 1 tsp ginger paste
- Freshly ground black pepper
- 1 tsp fresh cream
Making The Spicy Soup:
1. In a thick bottomed vessel, add a teaspoon of olive oil, garlic, ginger, onion paste, basil leaves, tomato puree and saute it for a few seconds.
2. Add vegetable stock to the vessel with salt and pepper. Stir continuously until the spicy soup boils.
3. Toast the bread pieces in a teaspoon of olive oil and add it to the soup. Garnish with fresh cream and serve.
Tasty tomato and bread soup is ready.
(Note: If you want the vegetarian soup to be thick, add 1/3 cup of rice flour water)
