Mushroom Onion Soup
Mushrooms are healthy and nutritious as they are less in fat and calories. It can be used as a main-course dish or as an appetizer. As it is winter, soup has become the snack for the evening. How about making mushroom soup at home? There are different varieties of mushroom such as button, shiitake, Portobello, cremini and porcini. You can also use dried mushrooms to make the delicious soup. Here is the mushroom soup recipe.

Mushroom and onion soup recipe:

Ingredients

1 ounce dried mushroom
2-3 small onions finely chopped
2 tbsp white mushroom sliced
4-5 carrots sliced into thin pieces
black pepper powder
salt
1 cup barley
2 tbsp soy sauce
oil
water

Directions to make mushroom onion soup recipe:

1. Soak dried mushroom in a bowl of hot boiling water for 20 minutes. After soaking for 20 minutes, take the mushroom pieces out and cut off the hard stems. Don't throw the water/broth from the bowl. Strain it and keep aside.

2. Slice the mushroom caps thin. In a saucepan, heat oil and cook onions till they become golden brown. Now add carrots and after cooking for 3-4 minutes, add barley and broth and bring it to boil.

3. Add white mushrooms and soaked dried mushroom slices in the saucepan. Now add salt, black pepper powder, soy sauce and boil.

4. Boil for 4-7 minutes till the broth becomes thick. You can also add little water to increase the quantity. Pour in soup bowls after the soup thickens.
