Weekend Special: Herb Grilled Chicken Pizza
There was time when eating pizza meant going to pizza joints or restaurants serving pizza. But I never relished the taste and ate as those were the only options. Then a few years back, we happened to go to Italy for a vacation and we ate pizzas at the local pizzerias and I just fell in love with the dish.
The crunchy and flavorful crust and the various toppings that went with it, without the overdose of cheese, was the most memorable experience. After coming back I did my research on home made pizzas and started making my own from scratch. It's a different topping for us every time and their are endless options. The crust that I came up with is the most flavorful and crunchy bread, and this time I topped it with some herb grilled chicken and an easy tomato and Alfredo sauce.
The only trick to make a good crust is to knead the dough till it is very elastic and smooth. If you have a mixer with a dough attachment, it makes your work easy, but you don't have one, do not step back. Go ahead and give your muscles some work and enjoy the most delicious home made pizza.
Ingredients
For the dough
- Extra Virgin Olive Oil- 1tbsp
- Active dry yeast- 1tbsp
- Sugar- 1tbsp
- Salt- 1tsp
- Warm water- 2 cups
- All purpose flour- 6 cups
For herb grilled chicken
- Chicken breast- 2
- Olive oil- 2 tbsp
- Garlic- 3-4 cloves (finely minced)
- Dried herbs (thyme, basil, oregano) - ½ tsp
- Salt- as per taste
- Black pepper - ¼ tsp
For the tomato sauce
- Olive oil- 1tbsp
- Garlic- 34 cloves
- Tomato- 6 (chopped)
- Capsicum- 2 ( chopped )
- Salt- as per taste
- Black pepper- ½ tsp
For the Alfredo sauce
- Heavy cream- 1 cup
- Butter- 2tbsp
- Parmesan cheese- ½ cup
- Salt- as per taste
- Black pepper- ½ tsp
- Mozzarella cheese- 1 cup

Method Of Preparation
For the dough
- Combine water, oil, yeast, sugar and salt in water.
- Keep the mixture aside for 10-12 minutes, until it is foamy.
- Add all purpose flour in a large bowl.
- Add the yeast mixture to the bowl and knead the dough.
- Keep kneading the dough with the heels of your hands for 8-10 minutes, until it is smooth.

- Keep the dough in a large oiled container.
- Cover the container with a cling wrap.
- Let it sit in a warm place for 2-3 hours, until dough triples in volume.
- If you have a mixer with a dough attachment, knead the dough for 4-5 minutes on medium high speed.

For the herb grilled chicken
- Add all the ingredients in a bowl and let the chicken marinate for 2 hours.
- Add olive oil a pan and grill the chicken from both the sides, till golden brown.
- Cut into small piece.
- Keep aside.

For the tomato sauce
- Add oil in a pan.
- Add garlic and fry for a minute.
- Add tomatoes and capsicum and 12 cup water.
- Cook till tomatoes and capsicum have cooked and all the extra water is evaporated.
- Add salt and black pepper.

For the Alfredo sauce
- Heat heavy cream and butter in a pan.
- Cook on medium heat for 3-4 minutes, till the sauce has thickened a little bit.
- Add salt and black pepper.
- Add Parmesan cheese.

Assembly
- Pre heat the oven to the maximum temperature of your oven.
- Mine is 250 degrees C.
- Keep a pizza stone and let it heat for 30-40 minutes.
- If you don't have a pizza stone, you can use a baking dish, but do not pre heat it in the oven.
- Now lay a parchment on your counter top and sprinkle some semolina flour on it.

Method Of Preparation
- Make 6 equal balls from the dough.
- Dust your hand nicely with flour and roll the dough ( 10 inch ) on the prepared parchment paper.
- Spread some tomato sauce, alfredo sauce, grilled chicken and some mozzarella cheese on top.

Method Of Preparation
- Slide the parchment paper on top of the pizza stone or lay it on the baking tray.
- Bake the pizza for 10-12 minutes, until the crust and top is browned.
- Remove from the oven and serve hot.
