Chicken Bhuna: Aunthentic Punjabi Recipe
Chicken Bhuna is one of the most popular curries that people order in restaurants. The recipe for Chicken Bhuna inspite of being categorized as 'resturant food'. 'Bhuna' means 'blanching in oil'. Mind you, it is not the same as frying. Chicken Bhuna is thus made by blanching the spices and chicken pieces in oil. The recipe for Chicken Bhuna is originally from Punjab in Northern India.
This is actually a very easy chicken recipe that makes use of very common spices. Only the way you use these spices and the order in which you add them is different. The seasoning comes first while making any Indian curry. But for Chicken Bhuna, you need to add the powdered and whole spices later. Chicken Bhuna is a pretty easy chicken recipe and can be prepared within half an hour if you have all the ingredients ready.

Preparation Time: 30 Minutes
Ingredients:
- White Onions- 2
- Ginger-garlic paste- 2tbsp
- Green chillies- 4 (chopped)
- Chicken- 500 grams (boneless)
- Fennel seeds- 1tsp
- Cumin seeds- 1tsp
- Cardamom pods- 4 (crushed)
- Red chilli powder- 1tbsp
- Coriander powder- 1tbsp
- Tomatoes- 2 (chopped)
- Garam masala- 1tsp
- Oil- 2tbsp
- Salt- as per taste
- Coriander leaves or cilantro- 2tbsp (chopped)
Procedure
1. Heat oil in a deep bottomed pan. Saute the onions in it till they turn brown. Then add the ginger-garlic paste.
2. Cook on low flame for 2 minutes. Add the chicken pieces and blanch them on medium flame for 2 minutes.
3. Sprinkle all the whole spices namely, fennel seeds, cardamom pods and cumin seeds. Cook for 2 minutes on medium flame.
4. Put the chopped tomatoes into the pan and sprinkle salt from the top. The salt melts the tomatoes to pulp quickly.
5. After 2 to 3 minutes, add all the powdered spices namely, red chilli, coriander and garam masala.
6. Cook the chicken in the spices for 4-5 minutes.
7. When the Chicken Bhuna starts looking dry, add a cup of water. You may add a little more water if you feel it is required but try to keep it thick.
8. Cover and cook on low flame for 10 minutes.
Remove the Chicken Bhuna from the flame and garnish with chopped coriander leaves. Serve it with plain rice or rotis.
