Egg Salad Sandwich For Breakfast
Start your day with something healthy and not to forget something yummy too. This egg salad sandwich is an easy recipe for working mums to prepare for their loved ones. If you have a fussy kid, this is a must breakfast recipe for you to try out this morning. It is yummy, delicious and contains a lot of nutrients and proteins to keep you energetic the whole day.
The egg salad sandwich for breakfast is also a less consuming recipe for you to try out. Working mums can also pack this highly nutritious dish for snack or lunch.

Here is how you make the egg salad sandwich, take a look:

Preparation Time: 15 minutes
Cooking Time: 16 minutes
Ingredients
- Eggs - 6 (boiled)
- Mayonnaise - 4 tbsp
- Spring Onions - 1 sprig
- Parsely - 1 (chopped)
- Pepper - 1 tbsp
- Lemon juice - 1tbsp
- Mustard - 1 tbsp
- Paprika - ½ tsp
- Bread- 8 slices (toasted)
- Lettuce - 1 ( chopped)
- Tomato - 1 (sliced, optional)
Procedure
1. You first need to place the eggs in a saucepan big enough for them all to sit in a single layer. Now cover the saucepan with cold water. Place the saucepan on a medium flame and bring it to a boil. You need to boil the eggs for about 5 minutes.
2 When done, place a bowl in the sink and use a spoon to transfer the eggs to another bowl. Run cold water over the eggs while you use the back of the spoon to gently smash their shells in several places.
3 Gently, remove one egg at a time, peel it, then set it aside.
4 When you are ready to make the salad, whisk together the mayonnaise, spring onions, parsley, salt, pepper, lemon juice, mustard and paprika in a medium mixing bowl. Now chop the eggs and add it to the bowl. Gently fold everything together.
5 Now divide the salad evenly among four of the slices of bread, spreading it flat, then add the lettuce leaves and tomato slices (optional), if using. Top with the remaining slice of bread and serve.
