Baked Eggs With Spinach For Breakfast
Baked eggs with spinach gives you just the right amount of energy, protein and nutrients that you need from a breakfast recipe. Baked eggs in itself is a healthy recipe because it uses lesser oil and fats. But when you add spinach to this breakfast recipe then it becomes a combination meal with taste and nutrients.
Baked eggs with spinach is a breakfast recipe that can be easily prepared in the microwave. This will save you those precious minutes in the morning. Being an easy egg recipe, this dish can be prepared in exactly half an hour. Baked eggs with spinach requires no special ingredients and you can depend on the spices present in your kitchen to make it perfectly.

Cooking Time: 25 minutes
Ingredients
- Spinach- 200 grams
- Eggs- 6
- Pepper powder- 1tbsp
- Cheese (preferably Parmesean)- 100 gms
- Red chilli flakes- 1tbsp
- Olive oil- 2tbsp
- Salt- as per taste
- Bread- 10 slices
Procedure
1. Wash the spinach leaves thoroughly because they often contain dirt.
2. Drain the water from it and boil with salt in a pot full of water. You need to boil it on high flame for about 2-3 minutes.
3. To check if it is done, pick up one leaf of spinach. If it breaks easily then it is done.
4. As the spinach is cooking, pre-heat the microwave to 250 degrees.
5. Drain the water from the spinach and let it cool for a while. Squeeze out the water from the spinach and finely chop it.
6. Drizzle 1tbsp olive oil on the baking dish and spread it evenly. Heat it in the microwave for 2 minutes on 100 per cent power.
7. Now place the spinach in the baking dish and season it with salt, pepper and chilli flakes.
8. Grate the cheese cubes over it and then make small depression into the dish with a spoon.
9. Break the eggs into these pockets. Add some more salt, pepper and chilli flakes and top it up with another table
10. Bake it for 15 minutes on 60 per cent power. Give sitting time of 5 minutes.
Then serve the delicious baked eggs and spinach with toasted bread. You can have it with ketchup of your choice.
