Alu aur Baingan
INGREDIENTS :
2 Cups Baingan (Brinjal) cubed
2 Cups Alu (Potatoes) boiled and cubed
1 Cup Onions Chopped
1 Cup Tomatoes Chopped
"' Cup Roasted Groundnuts
1 tsp Ginger Paste
1 tsp Chili Paste
1 tsp Jeera (Cumin seeds)
"' tsp Haldi (Turmeric powder)
3 tbsp Oil
1 tsp Sugar
1 tsp Garam Masala
Oil for deep frying
Salt to taste
METHOD :
Add Salt and Haldi to Baingan cubes and keep aside for 20 minutes. Deep fry the Baingan cubes and remove on a papar towel and keep aside.
For Gravy :
Heat oil, add Jeera and Onions, fry till golden brown. Add Ginger and Chili paste and fry. Add Haldi and Sugar and mix well. Add chopped tomatoes, "' cup roasted groundnuts, salt and Alu mix well. Now add the fried baingan and mix well, after a minute add a cup of water and Garam Masala and mix well. Close the lid and cook for 7 to 8 minutes and serve.
