Litti Chokha Recipe | How To Make Litti Chokha | Bhojpuri Litti Chokha Recipe
Litti chokha is a traditional Bihari recipe that is prepared as a main course and is popular in North India. Here is a step-by-step procedure.
Think of any region in the world and instantly you are reminded of its cuisine. If you think of Italy, you think about the Pastas and the Pizzas. If you think about France, it's their Cheese and Wine. Similarly, back home when you think about Bihari food, the first thing that strikes me is the legendary Litti Chokha. It is the king of every Bhojpuri kitchen, loved and adored by people of all ages. I am sure not only Bhojpuri people, North Indians adore this dish and make this at home.

For the dough:
Wheat flour - 3 cups
Ghee - 2 tbsp
Salt - ½ tsp
Water - ½ cup
For the filling:
Sattu - 2 cups
Garlic cloves, finely chopped - 5-6 cloves
Ginger, finely chopped - ½ inch pc.
Green chillies, finely chopped - 3-4
Coriander leaves, finely chopped - 1tbsp
Ajwain (carom seeds) - 1tsp
Kalonji (onion seeds) - 1tsp
Amchur powder (dry mango powder) - 1tsp
Mango pickle masala - 1tbsp
Sarson oil - 1tsp
Salt to taste
Ghee to serve
For the chokha:
Boiled potatoes - 2-3
Small onion (very finely chopped) - 1
Finely chopped green chilli - 1
Coriander chopped - 1 tbsp
Mustard oil - ½ tsp
Lemon juice - ½ tsp
Black salt or kala namak to taste
For tempering in chokha:
Refined oil - 1 tbsp
Dry red chilli (roughly torn) - 1
Mustard seeds - ½ tsp

- For the dough, first put the flour, ghee and salt in a bowl and mix with fingers.
- Add little water at a time while kneading to make the dough.
- Now to prepare a filling, put all the ingredients together in a bowl and mix with fingers.
- Adjust the seasoning if required.
- Now make balls out of the prepared dough, little bigger than the size of golf ball.
- Make a well at the centre and place the filling, then seal it properly.
- Same way prepare all.
- Preheat the oven at 200 degrees Celsius.
- Place the littis inside the oven and roast till they are golden brown.
- To make the chokha, put everything together in a bowl and mash till well combined.
- Adjust the seasoning.
- For that earthy flavour in chokha, always temper it.
- To temper it, heat oil in a small pan.
- Add the mustard seeds and red chilli, let them crackle and just spread over the prepared chokha.
- Enjoy hot littis with melted ghee and delicious chokha.
- 1. The littis are traditionally baked in charcoal tandoor.
- 2. If you do not have sattu, powder the roasted gram dal and use it.
