INGREDIENTS :
800gms Baby Potatoes
e tsp Turmeric Powder
2 tbsp Gingely (Sesame) Oil
1 e tsp Mustard Seeds
6 - 7 Whole Red Chilies
e tsp Jeera (Cumin Seeds)
2 tsp Broken Urad Dal (Black Gram Dal)
e tsp Hing (Asafoetida)
2 tsp Chili powder
8 - 10 Curry Leaves
A few Curry Leaves, fried in oil, to garnish
Salt to taste
METHOD :
Boil the Potatoes with Turmeric and e tsp Salt till almost done. Strain and keep them aside.
Heat oil in a kadai (wok). Add the mustard seeds and allow them to splutter. Then add the red chilies, Jeera, Curry leaves and the Urad Dal. Fry till the Urad Dal turns golden brown. Add Hing and the Potatoes and cook till done. Now, add the Chili powder and Salt to taste. Mix well.
Remove from heat and serve garnished with fried Curry leaves.
