Simple Aloo Baingan Ki Sabzi Recipe
It's tough to get your kids to eat a healthy dish of vegetables. Unless you have just the perfect combination spices in the dish, you will have a difficult time to make your kids enjoy it. Apart from kids even grown-ups tend to get fussy about vegetables. So, to make it easy for you we have a tasty and simple recipe that you can try out.
Today, we have a simple aloo baingan ki sabzi recipe for you to try. This dish does not require much time and is prepared with minimal spices which makes it an excellent dish for kids as well as the grown-ups in the family to relish in. Aloo baingan ki sabzi is a dry preparation and so it is also perfect to be carried as lunch box too.

So, try out this simple aloo baingan ki sabzi recipe and have a fuss free veggie meal.

Preparation time: 10 minutes
Cooking time: 20 minutes
Ingredients
- Baby potatoes- 5 (boiled & peeled)
- Brinjal- 1 (medium sized, diced)
- Tomatoes- 2 (diced)
- Garlic- 5 cloves (chopped)
- Green chillies- 2 (slit)
- Cumin powder- 1tsp
- Fenugreek seeds- ½ tsp
- Mustard seeds- ½ tsp
- Dry red chilli- 1 (broken)
- Salt- as per taste
- Oil- 2tbsp
- Coriander leaves- 2tbsp (chopped)
Procedure
- Heat oil in a pan and add mustard seeds, fenugreek seeds, dry red chilli to it. Fry for a minute on a medium flame.
- Then add in the chopped garlic and fry for another minute or so.
- Now add the diced brinjal pieces and the boiled baby potatoes. Stir fry for about 3-4 minutes.
- Add in the tomatoes, salt, cumin powder, green chillies. Cover and cook for 8-10 minutes on a low flame.
- Once it is done, switch the flame off, remove the cover and garnish with chopped coriander leaves.
Aloo baingan ki sabzi is ready to be served. Enjoy this tasty vegetarian recipe with rotis.
