Aloo Karela: Step By Step Recipe
Karela or bitter gourd is one of the most hated green vegetables. The bitter taste of karela that makes you hate this vegetable. However, you might not know that bitter gourd is one of the healthiest green vegetables that offers numerous health benefits. Bitter gourd juice lowers high blood sugar levels, aids weight loss, reduces hair fall and fights acne.
In a nutshell, karela or bitter gourd offers various health, skin and hair benefits. There are many ways to include bitter gourd in your diet. Apart from grinding the green gourd into a juice, you can also prepare some delicious recipes. Trust me, bitter gourd doesn't taste that bitter when cooked. Karela aloo ki sabzi for example is one of the most popular Indian side dish. It is low in calories and tastes yummy. And because not many people are in love with bitter gourd, we have added potatoes to this recipe to slightly twist the flavour.

Aloo karela ki sabzi, side dish recipe
Serves: 2
Preparation time: 10 minutes
Cooking time: 20-25 minutes
Ingredients
- Karela- 500gms
- Onions- 2
- Green chillies- 2-3
- Potato- 1 (small)
- Coriander leaves- 2-3 stalks (chopped) Cumin seeds- ½ tsp
- Hing- 2-3 pinch
- Amchur- 1tsp
- Turmeric powder- 3 pinch
- Red chilli powder- ½ tsp
- Coriander powder- ½ tsp
- Salt- as per taste
- Oil- 3tbsp
Procedure

Step 1
Cut karela (bitter gourd) into slices and wash. Add salt and marinate for 3-4 hours under the sun. This helps reduce the bitterness of the gourd. (If you are a diabetic, you can cut karela and use instantly).Once sun dried, again wash with water and keep it aside for few minutes.

Step 2
Slice potatoes into medium sized pieces and fry it in little oil till they turn brown. Remove and keep aside once its done.

Step 3
Slice the onions and keep in a bowl.

Step 4
Also, chop green chillies finely.

Step 5
Heat oil in a Kadhai (pan), add cumin seeds. Add hing when they splutter. Now, add onions and let it cook on a medium flame.

Step 6
Once they turn pink in colour add green chillies and fried potato slices into the pan. Let it cook for another minute.

Step 7
Add karela slices. Cover and cook for around 2 minutes on a medium flame.

Step 8
Now add salt, and other spices.

Step 9
Cover and let it cook for another 5 minutes on a low flame. Garnish with chopped coriander leaves.
