Butter and Capsicum Rice Recipe
Rice is one of the staple foods in many cuisines. Take Indian cuisine for example. A meal in many parts of the country is incomplete without rice. That is why there are varieties of rice dishes that are available in the market. POTATO VS RICE: THE HEALTHIER CHOICE
Today, we would like to share a new rice recipe - butter and capsicum rice. It is a delicious recipe that has a strong and special aroma. The dish is crunchy as it has capsicum and cashew nuts, which makes it a delicious Indian dish. Moreover, it is easy to prepare as well. Take a look.
Butter and Capsicum Rice Recipe:

Serves: 3-4
Preparation time: 10 minutes
Cooking time: 20-25 minutes
Ingredients
- Rice- 2 cups (cooked and non-sticky)
- Capsicum- 1 (chopped)
- Green chillies paste- 1tsp
- Mustard seeds- ½ tsp
- Cumin seeds- ½ tsp
- Cashew nuts- 1tbsp (broken and roasted in ghee)
- Black pepper powder- ½ tsp
- Cinnamon- 1 small stick
- Grated coconut- 1tsp (optional)
- Salt- as per taste
- Butter- 1tbsp
- Ghee- ½ tsp
Procedure
- Melt ghee and butter in a wok. When it melts, add cumin and mustard seeds. Allow it to splutter.
- Add the cinnamon stick and green chillies paste and sauté on low flame for a few seconds.
- Now add the chopped capsicum and cook on a low flame for about 4 minutes. Do not over cook them. The capsicum should become tender not burnt.
- Sprinkle salt and black pepper powder. Mix well.
- Add the cooked rice and roasted cashew nuts. Mix well so that all ingredients are evenly absorbed.
- Cook for another 2 minutes. Add grated coconut and mix with rice.
- Turn off the flame.
Serve the butter and capsicum rice hot with curry or with pickle and raita. ALSO READ: HEALTHY TYPES OF RICE FOR YOU
