Simple Gujarati Kadhi Recipe
Kadhi is a popular recipe that hails from North India. It is prepared differently in different parts of India. In Punjab, Kadhi is prepared with besan or gram flour with a curd based gravy. While in Gujarat, the Kadhi is prepared without the fritters. It has a sweet & tangy curd gravy and is simply mouthwatering. You cannot stop yourself from taking another bowl of this wonderful vegetarian recipe.
Gujarati Kadhi is a simple recipe which requires very less ingredients. The only thing that you need is time to let the gravy simmer. The more it simmers, the better it tastes. The gravy needs to be continuously stirred to avoid it from curdling. Then the tempering adds to the finishing touch of this amazing recipe.

So, try out this simple and irresistible Gujarati Kadhi recipe and give your taste buds a delectable treat.

Ingredients
- Besan (gram flour)- 2tbsp
- Curd- 1½ cups
- Ginger paste- ½ tsp
- Green chilli paste- ½ tsp
- Sugar- 2tbsp
- Coriander leaves- 2tbsp (chopped)
- Water- 2½ cups
- For Tempering
- Curry leaves- 5
- Cumin seeds- ½ tsp
- Mustard seeds- ½ tsp
- Hing (asafoetida)- a pinch
- Dry red chilli- 1 (broken)
- Ghee- 2tsp
Procedure
- Mix the besan, curd and water in a big mixing bowl. Whisk the listed ingredients well until it becomes smooth.
- Pour this mixture in a deep bottomed pan and bring it to boil.
- Add ginger paste, green chilli paste, sugar, salt and mix it well. Keep stirring it continuously.
- Cook the gravy for about 8-10 minutes on a low flame while continuously stirring.
- Once done, switch off the flame.
- Now heat ghee in a small pan and add cumin seeds, mustard seeds, curry leaves, dry red chilli, hing and fry for a minute on medium flame.
- Pour this tempering over the prepared Kadhi. Mix well with a spatula.
- Garnish with chopped coriander leaves.
