Hariyali Chole Masala Recipe
Adding the green colour to your food is a healthy habit to follow. With the winters ushering in, getting your hands on green leafy vegetables will not be much of a problem. But, to make them interesting for your family's taste-buds is a huge task. So, we have the perfect side dish recipe for you this evening.
Hariyali chole masala is a sumptuous chickpeas curry which is made with mint and coriander leaves. The gravy is prepared with ground coriander and mint leaves along with a blend of distinct Indian spices. It is a simple and a delicious recipe which is a must try if you want a break from the regular dishes.

Soaking time: 6 hours
Cooking time: 20 minutes
Ingredients
- Chickpeas- 250 gms
- Coriander leaves- 1 sprig (chopped)
- Mint leaves- ½ sprig (chopped)
- Garlic- 8 cloves
- Green chillies- 4
- Onion- 1 (finely chopped)
- Tomatoes- 2 (chopped)
- Ginger-garlic paste- 1tsp
- Turmeric powder- ½ tsp
- Roasted cumin powder- 1tsp
- Coriander powder- 2tsp
- Garam masala powder- ½ tsp
- Cumin seeds- 1tsp
- Salt- as per taste
- Oil- 2tbsp
- Water- 2 cups
Procedure
- Soak the chickpeas in water for about 6 hours or overnight.
- After soaking the peas, pressure cook with water and salt on a medium flame. Wait for 4 whistles to blow.
- Once done, keep the pressure cooker aside and wait for the steam to come out completely.
- Then drain the excess water and keep the chickpeas aside.
- Grind the coriander leaves, mint leaves, garlic, tomatoes and green chillies in a mixer. Add a little water to make a thick paste. Keep it aside.
- Heat oil in a pan and add cumin seeds. Fry for a minute.
- Then add the chopped onions and fry for 4-5 minutes on medium flame.
- Add ginger-garlic paste and fry for a minute.
- After that mix in the ground paste of coriander and mint leaves. Saute for 4-5 minutes.
- Add turmeric powder, coriander powder, roasted cumin powder, garam masala powder, salt and cook for about 4-5 minutes.
- Now add the cooked chickpeas and mix well. Make sure that the chickepeas are well coated with the masala.
- Once done, switch off the flame and serve.
Hariyali chole masala recipe is ready to be served. Enjoy this delicious dish with parathas or bhature.
