Delicious Aloo Capsicum Curry In 6 Easy Steps
Winter is almost here and the markets are filled with exotic winter vegetables which we all crave for. Carrots, radish, capsicum, green peas, beetroot, cauliflower, cabbage and so many other wonder vegetables of the season have taken over the market. It can leave you in a dilemma as to which one to choose.
Let us start with capsicum. It is one of the most delicious vegetables of the winter season. It can be cooked in numerous ways. It can be cooked with Indian spices along with other vegetables or you can also cook it with the Chinese sauces or Thai curries. In every way, capsicum tastes simply amazing.

Today, we have a simple yet delicious aloo capsicum curry recipe which you can prepare in just 6 easy steps! Isn't that wonderful? So, wait no more and get set to delight your taste buds with this special winter vegetable curry recipe of aloo capsicum.

Cooking time: 20 minutes

All you need
- Potatoes- 4 (diced)
- Capsicum- 3 (diced)
- Onion- 1 (chopped)
- Tomatoes- 2 (chopped)
- Garlic- 5 pods (chopped)
- Turmeric powder- 1tsp
- Red chilli powder- 1tsp
- Jeera powder- 2tsp
- Garam masala powder- 1tsp
- Jeera seeds- 1tsp
- Salt- as per taste
- Coriander leaves- 2tbsp (chopped, for garnish)
- Oil- 2tbsp
- Water- 1 cup

Procedure
1. Heat oil in a pan and add the jeera seeds and garlic. Saute for a minute and then add the chopped onions.
2. Once the onions turn golden brown, add the turmeric powder, red chilli powder, jeera powder, potatoes, capsicum and cook for 4-5 minutes.
3. Then, add the chopped tomatoes and salt to the pan and cook for another 4-5 minutes on medium flame.

4. Add a cup of water and mix well. Cover and cook for 5-6 minutes on low flame.
5. Once the vegetables get cooked, remove the lid and sprinkle the garam masala powder over it.
6. Switch off the flame and garnish the curry with chopped coriander leaves.
The delicious aloo capsicum curry is ready to be served. Enjoy this vegetarian treat with rotis or parathas.

Nutritional Value
The aloo capsicum curry is rich in vitamins A and C. It contains very low amount of fat which also makes it a good choice for dieters.
Cooking tips
- Add a pinch of salt while frying the onions. It helps the onions to get cooked faster.
- You may add more vegetables of your choice to the curry to make it more nutritious, if you prefer.
