Sattu Ka Paratha: Tasty Breakfast Recipe
Sattu is a popular form of flour in the Eastern states of India. It is a highly nutritious flour, made with the combination of various grains and pulses. This special flour is rich in fibre and protein which makes it extremely healthy. Sattu is used extensively in the East Indian cuisine, especially in the Bihari cuisine. The flour is used to make some very delicious items such as the popular Bihari delicacy, litti, sattu ka paratha, sattu ke laddoo etc.
Sattu is easily available in the grocery stores. However if you cannot get it near your house, you can easily prepare it home too. So, today we have a delicious breakfast recipe for you straight from the Bihari kitchen. Sattu ka paratha is a very unique and lip-smacking dish. It is similar to the other stuffed parathas. Only difference is, this paratha is stuffed with the mix of sattu flour along with a blend of spices which makes it totally irresistible.

Ingredients
For Sattu Flour
- Chana Dal (Bengal gram)- 100gms
- Rice- 50gms
- Wheat- 100gms
For Paratha
- Whole wheat flour- 2 cups
- Sattu flour- 1 cup
- Garlic- 6-7 cloves (finely chopped)
- Ginger- 1 small piece (finely chopped)
- Onion- 1 (finely chopped)
- Onion seeds- 1tsp
- Mustard oil- 2tsp
- Green chillies- 2 (finely chopped)
- Salt- as per taste
- Water- 1 cup
- Refined oil- 2tbsp
Procedure
For preparing Sattu flour at home
- Roast all the ingredients listed under sattu flour in a pan for about 10 minutes on medium heat.
- Stir the ingredients occasionally. When it turns a golden brown, switch off the flame and let the ingredients cool down.
- Grind all the ingredients in a mixer to make a fine powder.
For parathas
- Knead the whole wheat flour with salt and water into a semi soft dough. Keep it aside.
- In a bowl, mix the sattu flour, chopped onions, green chillies, ginger, garlic, onion seeds, mustard oil and salt together. Keep it aside.
- 3. Now divide the dough into 4-5 equal parts.
- Take one portion of the dough and roll out a small sized chapati.
- Place a tablespoon of the sattu filling in it at the centre.
- Carefully fold all the sides of the chapati towards the centre and seal it properly so that the filling does not come out.
- Now dust it with some loose wheat flour and roll out regular size chapati out of it.
- Heat a tawa and place the stuffed chapati on it.
- Add a teaspoon of oil to fry the paratha.
- Fry the paratha on both the sides till each side turns golden brown.
- Once done, transfer the paratha to a serving plate.
- Repeat the same procedure with rest of the portions of the dough to make more parathas.
Sattu ka paratha is ready to be served. This delicious breakfast recipe is a perfect accompaniment with pickle or thick yogurt.
